It’s the oak” is a promise to strike the right balance between varietal intensity -the true flavor of the grape when harvested -the vanilla, spice, and toasty oak flavors which are imparted from oak aging.  The winemaker for Silverstone, who calls his barrel cellar a “spice rack”, has to decide to use which oak barrels, how to ferment the wine and to age it or both, just enough to enhance the flavors of the noble grapes ,without allowing the oak to dominate the true grape character.

Fermented in stainless steel tanks at 86F the wine was transferred to American Oak (Missouri) barrels (60% new, 40% seasoned) with 100% wine underwent malolactic fermentation in the barrel over 12 months +  6 months aging  Wood aged for approximately a year then fined and filtered before bottling.  Notes of cherry and chocolate combine with sweet toasty oak for this full flavored cabernet with a long complex finish.  This intense but smooth cabernet will accompany grilled meats, vegetables and other well-seasoned foods.  Perfect wine for prime rib, baby back ribs and flank steak.
